Only one layout?...
I downloaded the demo a week or so back, and like the way predictive text entry is implemented. The three big buttons at the top show options for the word as it is entered, and in quite a lot of cases after a couple of letters these three button allow quite a high proportion of normal words to be entered.
The main reason I haven't bought it yet, other than having bought Fitaly and Calligrapher, is that all the skins are for the same keyboard layout - i.e. with very small keys. When I use the normal built-in keyboard I always use the big keys option which makes it much easier to 'type'.
To be fully skinable - which this MAY be (but isn't clear) - the actual key shapes need to be configurable, and slides for capitals, acents, etc.. need to be assignable.
Possibly with the next revision...
My 2c.

A good question!
Difference between US and CAN keyboards appears to be an

which is pronunced AY (not to be confused with the Bob and Doug MacKenzie "Eh" which is the equivalent of the US "Huh")
What an interesting world we live in

Topkey
I also think that Topkey is just great.
However it is a pain that when you reset you have to re select TopKey.
I mentioned this to the developer and at this stage there is no resolution.

I tried setting Transcriber as the default input method (using Pocket Tweak) a while ago, and after the necessary soft-reset, the PPC would continually hang at the ROM version screen (what a pain that was - create a backup, apply the tweak, soft-reset, hang, hard-reset, restore the backup, reapply the tweak, soft-reset, hang... ). So you may be better off as you are.

I agree on that. The developer tried to solve this, and succeeded in a way. But it wasn't safe enough, and we didn`t want to risk releasing it like that. He didn`t give up, hopefully it will be included in the next version.
