how in the word did he get the camera in there? does the PC Card still allow access to the CF slot?

Probably used a PCMCIA adapter. Because no, the PCMCIA sleeve does not leave the CF slot free.

Is there such a thing as a PCMCIA sleeve for the Jornada 568? I've never seen it online. The link takes you to the amazon page for the MMC enabled battery...
if the PCMCIA sleeve exists, could someone post a link?
