Quite honestly, I do not think any Bluetooth headset will do this. I have the Audiovox XV6700 with a Motorola headset and I use voice command. In order to activate voice command I must press a button on the phone and then speak to the phone in a normal voice. Once voice command understands what number to call, then after the call is placed the Bluetooth headset turns on.

It turns out that my old Motorola HS820 that I used with my Treo works to trigger voice dial as long as I don't have Voice Command installed. Honestly, while the features of Voice Command are very cool, I think the convenience of Bluetooth outweighs them. So for now, I'm keeping it uninstalled.
I'm not sure that this would also be true for the 6700. I went into a Verizon store and asked about this issue with regard to their new 6700, thinking that it would be the same as the 8125. The guy showed me a new Motorola headset with "4th generation technology" ($150) and said that it was the only one that would trigger voice dial on the Starcom 6700.

My HS850 works well with my 8125.
