I just ordered a Dell X51v to replace my "old" iPaq h3955. I am very excited about getting it. Some questions:
-- I ordered an extended battery. Is there a case that will work satisfactorily with both the standard and extended battery?
-- Can I expect to use most of the software I already have licensed for my h3955?
-- What is the best source for add-on items other than Dell?

Usually, there are two separate cases for both batteries, since the size of each are different. Sena Cases makes some good ones:

Usually, yes. Most products generate registration keys off the owner name of the device, so ensure you use the same name. However, there are some unique products which generate registration keys off your owner name and your device model. If that is the case, you might have to get a new key off the developers.
What is the best source for add-on items other than Dell?
Depends what you're after. For cases, there is Sena Cases, Vaja Cases, nSignia, Piel Frama, and the list goes on. For upgrades, screen protectors and a small range of accessories, there is Pocket PC Techs. For software, there is Handango or PocketGear.
