I wish to completely start over with a fresh install. Renaming the device, choosing where programs are installed, and so forth. I have quite a lot of PIM data entered into the X50V. What is the most reliable method for restoring this data into a device that would look very different from the one from whence it came?

www.spritesoftware.com and Outlook.
Sync to Outlook and then sync the new "fresh" device and have all the data sync'ed back.

Sprite works independently of platform and as such a backup with only the PIM saved will be able to "jump" to a new device. You can't restore full backups of one device to another since the hardware is different.
