Pocket DVD Wizard - very cool application that converts/compresses any video format to one supported by your PDA. You can choose the compression quality, specify output memory card size and upload the converted video directly on you PDA.

There are of course some open source projects like http://www.fairusewizard.com/lang_en/index.html . I haven't used it yet, but have heard it does a good job.
