Can a Mac and iPAQ work together?

I have an iPAQ 2210 and I'm looking into buying a new laptop. For some reason I am tempted by an Apple iBook with a Bluetooth module.

Question is how can I synchronise the two - i.e. no more ActiveSync! - also any other draw backs of going with the Mac OS?
