I haven't had a complaint yet!

Ingredients:
1&1/4 cup Graham Cracker Crumbs
4 Tbsp. Sugar (Optional)
4 Tbsp. Butter or Margarine, just melted
5(8 oz.) pkg. Cream Cheese (I use [(2) cream cheese] + [(3) 1/3 less fat cream cheese(neufchatel cheese))
1 cup Sugar
3 Tbsp. Flour (All-Purpose)
1 Tbsp. Vanilla Extract
3 Eggs
1 cup Sour Cream (I use less fat sour cream)
1 tsp. lemon zest

Directions:

PREHEAT oven to 350 F

MIX first 3 ingredients and press onto bottom and lower sides of 9-inch springform pan. Bake for 10 minutes.

MIX cream cheese, sugar, flour and vanilla in large bowl with electric mixer on medium speed until well blended. Beat eggs lightly in small bowl and add in thirds, mixing on slow speed after each addition until just blended. Blend in sour cream and lemon zest. Pour over crust.

Prepare to bake by making water bath for cheesecake. Boil water for waterbath. Get pan which is larger than springform pan and place a thin towel in bottom of pan. Wrap bottom and sides of pan with multiple layers of aluminum foil to keep water out. cover bottom of pan and towel with thin layer of boiling water. Place wrapped springform pan on towel in pan and fill water bath with boiling water around halfway up the sides.

Bake 1 hour to 1 hour and 10 minutes or until center is almost set. After removal from oven, run thin knife around edge to loosen cake. Refrigerate at least 4 hours or overnight. When ready to serve, run knife around edge to loosen cake again and remove rim of pan.

I've tried all kinds of Cheesecake recipes, and the one that gets the most oohs and aahs is:

1. go to the store and buy 2-3 bricks of Philly Cream Cheese.
2. Follow the directions for the Cheesecake base.
3. Put fruit on top (optional)

Seriously, the simple baked cheesecake recipe on the Philly package tests the best. It's something like 2-3 bricks of Cream Cheese, 1.5 cups of sugar, 1 T of vanilla, and 2-3eggs. That's it.

Want to make it easier? Make sure the cream cheese is room temperature, either by nuking or by leaving it out for 30 minutes or so. Then put half the ingredients in the BLENDER, not in a mixing bowl and BLEND until smooth. I can have a cheesecake prepared in and the oven in less than 5 minutes.

My customization, which I got from my mother is to NOT use a graham cracker crust but to use a regular old pie crust. While I like the Graham crust, it tends to make the overall pie too sweet.
