This morning when I turned my phone on, it was on the wrong time zone and lost the active sync settings for my sync with exchange (EAS). Why does this happen and is there a fix? I go to ActiveSync and it is 'blank'. My contacts, old email, shortcuts are still available.... odd.

What phone is it, by any chance is it i600?
I have seen similar stuff happening with my phone, once in a blue moon. I suspect registry corruption. Use some backup software like Sprite backup to preserve the system settings.
Also I have heard i600 users complain about phone resetting and losing the timezone and ActiveSync settings.

A lot of i600 have reported the symptoms you listed.
The solution I believe is near. Hopefully next week when WM 2003 Update (http://www.smartphonethoughts.com/forums/viewtopic.php?p=39594) gets released by Verizon. It I believe will fix those issues, at least that is what the users are hoping for.
