I have a first gen Touch Diamond and initially had the same impression about the responsiveness of the touch screen. I did some research on xda-developer.com and found a tip regarding a couple of registry settings that were claimed to be able to improve screen sensitivity. Although I was a bit skeptical, I tried them and they made all the difference in the world. My Touch Diamond is now nearly as sensitive as your typical capacitive screen device. I can't point you right to the tip, since I did it several months ago, but it's well worth the effort to search for it.
As for the new devices, I just finished my review of the Touch Pro2 and its screen sensitivity is excellent right out of the box, again nearly comparable to capacitive screen devices and far better than my Touch Diamond was prior to the registry changes. I hope to publish the review later this week.
