Not unless you've backed up the data somehow. This is somewhat akin to "I've just erased my computer's hard drive; is there any way to get my old data back?"
I guess that somebody could write some sort of program to peek through memory to find old directories, etc. I know that such programs exist for PC's, that root around the drive data looking for bits of old files, etc. Such programs would be hit or miss at best, and I don't think anything could guarantee 100% success.
A backup solution is always best.
The ActiveSync that comes with the 3765 allows you to do a "full backup" from the "Tools" menu. Just select Tools/Backup and Restore and follow the prompts and press "Backup Now." This will copy MAIN memory (NOT your storage card, if you have one) to your PC.
The 3765 doesn't come standard with CF, as has been suggested, but the CF sleeve (about $40 retail) is a good option to get. That, with a 128 Mb CF card (about $80 retail) will allow you to copy all your files to CF. Even better, there's an option in PocketPC O/S to backup main memory to the storage card. The storage card solution sounds pricey ($120 retail), but consider that a lot of digital cameras can use the CF card, and even if you just use it for stuff like MP3's, a 128 Mb card can fit almost 2 hours of music! You could purchase a bunch of flash cards... one for photos, one for ebooks, one or two for MP3's, etc.
Either backup solution is good, as long as you remember to backup on a regular basis (of course, this is true with any computer!). If you don't want to lose more than a day's worth of data, perform a backup every day (ActiveSync can be set up to automatically do a backup when the device connects, making this almost mindless).
