I went with the 2750, and am liking it a lot.
True, VGA makes for a prettier experience, but the 2750 just felt faster to me when I was trying them both out (The 4700 does have to render 4 times the number of pixels with the same processor, I know there's a graphics chip in there, but it didn't feel like it to me). And currently the 2750 holds the GX Mark benchmark record (even over the Axims).
The RAM is nice. Right now I'm barely even scratching the surface, but I hear it helps with GPS, which I want to be getting into.
I don't really care for the 4700's touchpad (I like to play games), but watching movies on the 4700 is unbelievable! (Might start a fight, but I think it looks better than my friends PSP...Thats right I said it!) The 2750's speed makes it acceptable for movies, but they wont look nearly as good.
If Security is an issue, the 2750's fingerprint scanner is awesome! Its a lot more stable than the 5550's, and easier to set up.
Also where I was the 2750 was almost $100 cheaper, so that helped the decision (extended battery!).
So really, as with any model debate, which PDA to go with just depends on what you want to use it for.
If you dont want to stay with HP (I only did because I didn't want to replace accessories) the Loox is an excellent suggestion. USB host sounds pretty cool, and the over all form factor doesn't look much bigger than the 2750.
