I would use it for a new PC I'm building for my sister. Her old PC is dying so I'm donating a bunch of parts to the cause. I don't have a good hard drive yet so this would be a huge help.

I want to build a FreeNAS server and I need some storage space. This would be a great start.

Someone just gave me a Pentium 4 mobo, and it has SATA. I'd ditch my old Athlon XP board and 80gb hard drive for the new parts.

I would fill it up with my kids DVDs and hook it up to my media center machine so they could have spongebob on demand streaming...

I would use it to replace the data drive in my media server which is too small and running out of space.

I would add it as an external drive to my network. I'm in the process of upgrading from 200GB to 1TB. So another 500GB would be sweet!

I would use it as a primary for my main system. Something I can put Windows 7 on to test to see if I'll keep it on or not.

SATA. Won't work in an older machine without a Promise card (or similar)....

Would probably still roll it through: add the 500 to mine, roll my 250 over to my wife (who has started to appreciate the joys of digital photography), and then roll one of her (IDE) drives to the Designated (but not yet Really Operational) Household Backup / Server.....
