I'm probably well suited to answer some of your questions, as I'm a Cox customer with a T-Mobile US SDA.

And your company is OK with you forwarding your email off the corporate mail servers? This seems like a big security issue! What if someone at Cox has a relative who works for a competitor, for example?

You can't with the built-in Messaging application. There are some 3rd party mail programs out there that may support this (although I don't know of any off the top of my head).

This is very odd. What do the text messages look like? SMS can only be ~150 characters, so it can't be the whole message!
Did you mess with T-Mobile's push mail solution (My E-Mail) at all? That will check your POP inbox and forward you a text message when it sees an email. Of course, you're never supposed to see the text message, as it's just a trigger to auto-sync with the T-Mobile servers.
The only other thing I can think of is you turned on POP account checking in Hotmail, which can send "MSN Alerts" to you whenever you get new emails.
The T-Mobile "My Email" system might be a good way for you to set things up, actually. If you go through the T-Mobile "My Email" setup, you can be automatically notified when a new message comes in rather than wasting battery life checking the mail server constantly for new messages. One issue for you might be that T-Mobile's solution syncs back deleted items, but it doesn't sync folders other than the Inbox.
