I too find this handy, I really wish that there was an option to answer on speaker in the background though. It seems like whenever I am using my GPS app someone calls when I am getting close to my turn. It would be nice not to have to quit the GPS app and then have to go back in to answer the phone. Since it can take up to a minute or so, get the GPS lock, and recalculate the route if you are near a turn you can easily drive right by it while answering a call. Since they allow you to do it after you answer a call it doesn't seem like it would be a big deal to do something so you can actually answer a call and keep the current app running. Well maybe 4.0 will make it all a moot point anyhow with real multitasking.
