Saving/Migrating Outlook & Express

I'm looking for the best tools/methods for saving all my Outlook and Outlook Express messages and info from a PC I need to relinquish back to my employer. I know how to save and merge PST files, but what are the easiest or best ways to handle this (especially with OE).
