What is the difference between the SanDisk 2GB mini sd and the SanDisk Ultra II 2GB mini sd?

The Ultra II cards have high-speed ratings. Though you wouldn't see full performance in a PPC.

I've only got the Ultra II. Perhaps someone else with the standard version, and myself could get together and put both cards through a series of tests. What did you have in mind?
