Where can I find development information for the Dolphin 7900 or any dolphin dev information in general ? Specifically looking for information regarding the scanning device and the keypad. Any help would be much appreciated, thanks!

There is a button "Developers Resources for Dolphin 7900/9500 Series" that takes you to: http://www.datacol.co.nz/sw_resources.html

And on the Datasheet (http://www.datacol.co.nz/pdf/hhp_d7900.pdf) it says these key words:
"Windows Mobile Second Edition Software" and
"with Industrial Touch Screen"

This tells me it is a WM2003SE Pocket PC device.

You should be able to program it using eVC or C# and the .NET Compact Framework 1.0.

Presumably one or more of the many links on the pages above would lead you to more detailed information on any particular APIs that might be available exclusively on that device.
