I'm having a hard time understanding what the real difference is between RAM and ROM. I know that the ROM is where the OS is kept. The thing that throws me off is that I have read things about people saving to ROM which I thought was Read Only...

Also what the heck is "Built-In-Storage"? Is it just left over space somewhere? Help!

The Built-in storage is just leftover space in the ROM that isn't used up by the OS, on mine, it's about 21 MB. It's non-volatile, meaning that if you did a hard reset, it wouldn't be erased. The RAM is split into storage and program memory, the split is managed by the OS, most of it can be used for storage, but some of it needs to be used to run programs in.

On my Ax, the Built-in storage is used for themes, some ebooks and pictures. Just don't run programs from it, it's slower and can cause problems.

For the RAM, I have about 20 MB reserved for program memory, the rest is for storage.
