Anyone know any good pieces of software for making music on pocket pc, ideally via piano/keyboard on screen, record and playback in real time, multi-voice ?

There are several such programs out there. Do a search on this board and you will find several discussions about them.

I tried several demos, and wasn't too happy with them. One problem is, the demos are so crippled, so many features unavailable in the demo version, one cannot really get much of an idea of the product. I don't know why developers cripple their demos so much that the user cannot get a good idea of the product, and cannot make a fair evaluation to decide whether to buy it or not. Makes more sense to have a timed demo, which expires in a month. If you cannot try out some of the most important features, the demo is worthless. So, I haven't yet purchased any.

Wouldn't it be nice to have Cakewalk and Band-in-a-Box for Pocket PC? (No, those don't exist. Just dreaming.)

not really, more of a full size keyboard on screen where you can record notes in real time, and multitrack...

I tried PocketSynth Professional (http://www.pdamusician.com/) some time ago and I liked it. But actually I did not need it...

Pocket Synth pro - I've just tried that and it has a big letdown (unless I'm using it wrongly?). You can select "real time" to record, but then when you play it back it changes it to equal time (all notes same duration). What's the point of that??
