Just wondering if its possible to create a new contacts list, say for example, a "CLIENTS" folder that would list all of your potential clients info.

You're talking about doing this in Outlook on the desktop, right? I would avoid using folders. Instead, use the category feature. You can change the display contacts based on their category. And I'm pretty sure you can filter contacts in ActiveSync based on categories. It's a more complete solution than creating a folder for them. :)
