They do, but it is up to the creator of the skin to add support in.
If you're feeling adventurous, open up the skin folder and you'll see a series of graphic files and a SKN file. Open up the SKN file with a text editor, and if you see a header called
[ AlbumArt ], then the skin supports the display of Album Art. If it's missing, then it won't display it.
Now in this case, I can't recall if Spb's UniThemes support Album Art. If it doesn't display, then it's probably safe to assume that it doesn't support it.
