The way gmail light works you "keys" are encrypted though the whole process but that doesn't stop someone from making a fake gmail light and collecting user data.
So I guess the answer to your question is no, there are no assurances. However at least two of the gmail sites mentioned are hosted by prominent menbers on this site and noted pocket pc software developers. So I personally trust them. However I would not go out and use any old gmail light setup. As double insurance i setup my own gmail lite page on my server and read through all the original gmail light code, which is available at source forge and thus not spy/malware, just to reasure myself that the original code was not "evil".
I could very easily make a new account on this site and post in this thread with a link to my new gmail site that is actually a pass word collector.
So everyone should be carful. Just use common sense.

The host is very active in these and other forums i read and i use several pieces of his software on my ppc. I trust him not to try to steal my pass word.
Or if you have access to a php web server you can very easily setup your own gmail lite page.
